Holiday Olives

This is an easy and beautiful dish, both to the eye and the palate, for the holidays!

Here's all you need to get started:

2 - 8oz. pkg neufchatel cheese (found next to cream cheese)
1 - 10 oz. jar queen olives (if you have a Publix supermarket, get Publix brand)
1 bag of pecan meal (found in produce section)

Drain olive juice & put olives in a large shallow bowl, allow time for the olives to dry.
Open both packages of neufchatel cheese and unwrap the cheese so it is easily accessible to your fingers.
By hand take a clump of cheese and form a ball around each olive & then set each one aside on a plate.
After you have made olive balls using all of the olives, then take each “olive ball” & roll it in pecan meal & place on a large dish.
Cover dish with saran wrap & place in the refrigerator overnight.
Cut olive balls in half for final presentation on a pretty dish.
(Helpful tip: I usually cut each in 1/2 right before serving.)

Voila! Oh and don't say I didn't warn you ... if you love olives (like me) make a few extra because you WILL eat a few ... they are crazy addicting!
